Day 2-root beer pulled pork (sort of)

I ❤❤❤ the crockpot, set it and forget it.. With a newborn and a young one to get ready in the morning, the crockpot is this momma's dream! If it could only wash itself afterwards... This morning after J got on the bus to kindergarten ( I still get a tiny ache in my heart when he waves from his seat) I was super excited to start this recipe that I pinned http://www.dessertnowdinnerlater.com/2013/06/root-beer-pulled-pork-sandwiches.html?utm_source=feedbu...
However little E had other plans for me! She wasnt interested in sitting in her bouncy seat or being in her new Ergo carrier.. Today she just wanted to be held!!! I just wanted 15 mins, if that!! 😁have u ever tried negotiating with a 7 week old??? It went something like this: me in a sing song voice " E if u let mommy do this I'll hold you all day, all day , ohhhh yes I will, all the live long daaaaaayy" E replied "waaaaaah" so needless to say baby one.. Sort of! I quickly read the ingredients, baby still crying, put 2 pieces of pork tenderloin in crockpot ( that's the meat I had) washed hands, picked up baby. Baby happy! Mommy still determined to do this... Recipe not in reach so here's what I did: 2 pieces in the crock, I added a can of coke, yes I know it's root beer pulled pork, but I'm improvising with what I had, and it's a miracle we had soda anyway...So pork, one can of coke, and I begin to pour in the bottle of sweet baby ray's bbq sauce, when I realized it wasn't suppose to go in.. Oops!! So all but 1/4 of the bottle was in, and I turned it on low for 6 hours. I must say within an hour the house smelled amazing 👃 I thought to myself not bad for already messing up the recipe, OH and I did not grease the pot or season the meat. I did though however follow the rest of the recipe and reserved some juice, shredded the pork, and added the remaining sweet baby ray's! We ate it over a big organic sweet potato. Delish!! But only 👍👍👍 bc J ( the almost 6 year old) decided he doesn't eat meat or Brussel sprouts!! Everyone else had 2nd's! So go ahead, make this .. Even though I'd say it's more had) washed hands, picked up baby. Baby happy! Mommy still determined to do this... Even though I'd say it's more of a "PINspiration" since I loosely followed the recipe! Besides a sweet potato this wound be really good on a potato roll with big Y summer slaw.. Just sayin 😉
