Chocolate Snack Bites

As many of you know, I ended up stepping away from the blog for the summer.  So now that I am back to trying more recipes, I just had to start with this one. This quick and yummy recipe is definitely going to make the top 10 list of kid friendly "healthy" foods.  I can't make enough of them!!!

As with most snack balls/bars, there are tons of different ways to make them, but they are all similar as far as being a quick "grab and go" snack for kids and adults.  I am going to be posting a few different varieties of snack balls/bar recipes in the upcoming blogs. 

This one is definitely the simplest one to make-having only 4 ingredients.  As far as nuts go, pecans and walnuts are the kids favorites for this recipe. We have made them using all the same type of nut and also by mixing two different kinds-be creative!!  Also, don’t feel you need to follow this recipe using exact measurements.  It is really a matter of taste.  Just make sure the batter is sticky enough to roll into balls.

I know….some of you are saying what the heck is raw cacao powder and where do I find it.  Raw cacao (raw chocolate) comes from the cocoa bean and it is the most plain and purest form of chocolate there is.   It has not been roasted, processed (like its cousin known as cocoa) or combined with any other added ingredients such as sugar.  So basically, if you take a typical chocolate bar and take out all the unhealthy ingredients (no processing either), you would be left with just the good stuff-raw cacao.

Also, It is known as a superfood for health and vitality and can be found in various forms in any health food store and most certainly all over the internet.

David Wolfe has a book called Naked Chocolate if you want to learn more about raw cacao and to try out dozens of raw chocolate recipes, including drinks, desserts, healthy snacks.  

You can purchase it in any health food store-including Nature’s Grocer in Vernon.  Note: One bag goes a long way since you don’t use lots of it in most recipes.  Well, unless you can’t get enough of it-like me!!!

Back to the snack balls- They are great as is or I love to roll them in coconut, hemp or flax seeds for added nutrition-again be creative!!  Lastly, my kids love them frozen, but they do require freezing so eat them as you like.   They grab them for snacks in the car when we are running out the door.
